Chicken Caprese Salad

If you planted a garden, you should be picking lettuce and maybe even tomatoes right about now! I’m going to use mine to make a Chicken Caprese Salad for my meal prep for the week. These will also pack up nicely for Adrienne’s softball tournaments. I’ve been ordering a grilled chicken salad on Friday nights and bringing half of it with me to her games on Saturday.

I did share a Caprese Salad recipe recently, so now you have a few different Caprese salad options to choose from! This is a hearty enough salad that you can serve as a main meal. But it would pair nicely with some soup in the colder months.

Chicken Caprese Salad Recipe

Chicken Caprese Salad

Great for meal prep days so you can grab and go on practice days or tournament weekends.
Course Salad
Cuisine Italian

Ingredients
  

Dressing

  • ½ c Balsamic vinegar
  • ½ c olive oil
  • 1 Tbsp Honey or maple syrup
  • 2 tsp Mustard
  • ½ tsp Salt
  • ½ tsp Black pepper

Caprece Chicken Breast

  • 1 c Chicken breast boiled
  • 1 Tbsp Olive Oil
  • tsp Salt

Salad Ingredients

  • 2 ½ c Cherry tomatoes
  • 300 g Mozzarella balls
  • 1 c Cucumber
  • 4 c Spinach
  • 1 c Basil

Instructions
 

  • Prepare all the ingredients.

  • Cook the chicken with the oil and salt.

  • Mix all ingredients for dressing.

  • Pour some dressing into serving jars, top with the cherry tomatoes

  • Layer chicken, then mozzarella, then cucumbers.

  • Then spinach and basil.

  • Serve.

What’s great about having a salad in a jar is that your dressing can be at the bottom of the jar, separated by the cherry tomatoes and it won’t make your salad all soggy if you keep your containers upright when you store them or when you carry them to your destination! One less item to wash, too!
